Puff Pastry Pecan Pie Crust

Ingredients

• 2 sheets puff pastry, thawed according to pkg. directions
• 6 oz. bag pecan pieces
• 1/2 c. sugar
• 1/2 c. corn syrup
• 2 t. butter, melted
• 1 tsp. vanilla extract
• 1 large egg, beaten

Directions

1. Cut one sheet of puff pastry into 4 equal squares, cut 2 equal size squares from the other (if using a large 6 cup muffin tin).
2. Butter the muffin tin well (around the top of the cups too) and gently press each puff pastry square into each cup. In a bowl, combine the remaining ingredients. Divide the pecan mixture between the puff pastry cups.
