Ingredients

  • 1 large egg yolk
  • 2 garlic cloves
  • 1 tablespoon dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 tablespoon Worcestershire sauce
  • 1/2 cup extra virgin olive oil
  • 1 ounce anchovy fillet
  • kosher salt
  • black pepper
  • 1 head romaine lettuce
  • 1/2 cup crouton
  • 1/4 cup parmesan cheese
  • 4 slices bacon

Directions

  1. In a food processor combine the egg yolk, garlic, mustard, lemon juice, vinegar, and Worcestershire.
  2. Pulse the mixture together until garlic is finely chopped.
  3. Then, while continuing to pulse, add the olive oil in a very patient, slow, steady stream to produce a smooth, creamy mayonnaise like emulsion.
  4. Add the anchovy, pulse for 30 seconds, and season with salt and pepper to taste.
  5. Place lettuce into 6 individual salad bowls (if wooden, smear with additional clove of garlic).
  6. Pour desired amount of dressing over top of each salad.
  7. Sprinkle with croutons, Parmesan cheese, and optional bacon bits.

Tip

Add the croutons or chips just before serving so they stay crisp.
